(Stuffed Turnip with Sumaq)
¼ pounds of ground 93% or more beef
Pasta and Grains
1 cup of basmati rice
Baking and Spices
½ tsp black pepper, ground
1 tsp salt
½ tsp whole spice, ground
¼ tsp cloves, ground
¼ tsp cardamom, ground
¼ tsp cinnamon
2 tbsp tamarind paste or condensed pomegranate juice
2 tbsp sumaq
How to make it:
Soak the rice in hot water for 10 minutes, then remove and set aside.
Mix the rice with beef and season with all spices above except for the sumaq.
Peel and core the turnips (reserve the pulp to use it as a cooking base), in a dutch oven, add vegetables oil and fry the turnips on all sides till golden.
Stuff the turnip with the rice mixture and set aside.
In another pot, add the turnip pulp, sumaq, tamarind paste with 2 cups of water, then add the turnips and let it simmer for an hour or until ready.
