Lift Mahshi

(Stuffed Turnip with Sumaq)

 

Ingredients:

 

Meat

¼ pounds of ground 93% or more beef

Produce

6 turnips 

Pasta and Grains

1 cup of basmati rice

Baking and Spices

½  tsp black pepper, ground

1 tsp salt

½ tsp whole spice, ground

¼ tsp cloves, ground

¼ tsp cardamom, ground

¼ tsp cinnamon

2 tbsp tamarind paste or condensed pomegranate juice

2 tbsp sumaq

 

How to make it:

  • Soak the rice in hot water for 10 minutes, then remove and set aside.

  • Mix the rice with beef and season with all spices above except for the sumaq.

  • Peel and core the turnips (reserve the pulp to use it as a cooking base), in a dutch oven, add vegetables oil and fry the turnips on all sides till golden.

  • Stuff the turnip with the rice mixture and set aside.

  • In another pot, add the turnip pulp, sumaq, tamarind paste with 2 cups of water, then add the turnips and let it simmer for an hour or until ready.
