Salad:
Quinoa Salad with Dried Fruits
Quinoa Salad with Dried Fruits
Ingredients:
Produce
¼ cup of pomegranate
½ an avocado
Handful of fresh mint
Condiments
¼ cup of pistachio
¼ cup of plain almond
¼ cup of dried fig
¼ cup of dried apricot
¼ cup of raison
¼ cup of sun flower seeds
Pasta and Grains
1 cup of quinoa
Oils and Vinegars
Extra version of olive oil
Sesame oil
Baking and Spices
¼ tsp black pepper, ground
¼ tsp salt

How to make it:

In a boiling water pot, steam the quinoa for 10 minutes and then set aside

Finely chop the pistachio, almond, dried fig, dried apricot, raison and sun flower seeds. Sautee them with sesame oil for few minutes and set aside.

Mix the above with the quinoa, place in a bowl and season with salt and pepper. Add the pomegranate, avocado and fresh mint on top and serve.
