Kubet Batata (vegeterian)

Kubet Batata (vegeterian) 




3 big potatoes 

1 onion

6 cloves of garlic

2 medium zucchini

1 red pepper

2 medium carrots

Oils and Vinegars

Extra version olive oil

Baking and Spices

¼ tsp black pepper, ground

1 tsp salt

¼ tsp whole spice, ground

1 tsp dried oregano

5 tbsp Italian breadcrumbs



How to make it:

  • Sauté the 6 cloves of garlic with extra version olive oil, until lightly browned, then add the potatoes for a couple of minutes, then add 3 cups of water and let it boil for 30 minutes or until soften.

  • Meanwhile, finely chop the onion, sauté with extra version olive oil, until lightly browned, and add the rest of the vegetables (finely cut). Add the salt, pepper, oregano and whole spice, and keep it under medium temperature until fully cooked.

  • Mash the potatoes, and take half of the quantity and spread it over a Pyrex, then add a layer of the cooked vegetables, and a final layer of the rest of the potatoes. Evenly spread out the breadcrumbs and drizzle some extra version olive oil.

  • Put in the oven at 425 degrees for 20 minutes.
